'Heads, Happy 01-01-00 to you all. May you all have a blessed, prosperous and fruitful 2000! *Finally* got around to making the cranberry-jalapeno relish... Took three days to find any cranberries anywhere; now I know to get plenty and freeze them when they first hit the stupor market. (Live and learn.) Anyway, the orig recipe follows - I posted it here before: 12 oz. pkg. fresh cranberries 1 whole lime 3/4 cup sugar 2+ jalapeno peppers 1/4 cup chopped fresh cilantro Procedure: Place cranberries in food processor; process until coarsely chopped and transfer to bowl. Cut lime with peel into small chunks. Process until finely diced and add to cranberries along with sugar and minced jalapeno. Mix in cilantro. Refrigerate relish for several hours to allow flavors to mellow and blend. Serve chilled with ham or turkey. I used one pint of frozen cranberries. Couldn't find any fresh, or in 12 oz. pkgs. And used 4 chipotles outta adobo. And increased the cilantro to a BIG stuffed 1/2 cup. And used my 20+ year old blender - worked slick! Next time I'd decrease the sugar just a titch, and not use 4 chipotles! <g> Well, guess I can't stay a wimp all my life... But, ittiz pretty hot for moi! Tho I've not been eating it on anything - just by itself. Ittiz really good! Bet ittiz gonna be hotter'un hell after it sits for awhile in the 'frig. Oh, well! Anyway, ittiz really good - the lime, cranberry and cilantro are heavenly! Will have the relish, a garlic/cilantro chicken and Chiles Poblanos Rellenos de Queso tomorrow as a New Year's dinner. <smaking lips and drooling> Happy New Year!! green
