For a copycat version of Hershey's syrup, try http://www.copykat.com/asp/copykatrecipe.asp?recipe=128 - any brand of cocoa will work, and I've gone so far as to make a pretty darn good carob version with this recipe. For an added kick, there's no reason a bit of chile powder of choice couldn't replace some of the cocoa. ________ I'm going to use Bakers Unsweetened liquid chocolate packets instead of Hershey's Syrup. How many packets would equal one can of Hershey's Syrup? Can I cut out all the white sugar in the recipe, adding sweet spices such as cinnamon and vanilla? I wouldn't recommend trying to sweeten it with spices, especially if you're using unsweetened chocolate. I've tried similar things before with somewhat... erm, it scared people, and not in a good way. I don't know your reasons for cutting out the sugar so I can only speculate, but if you're not diabetic you could replace it with raw sugar (turbinado) or Sucanat. If you are diabetic, I'd say something like fructose or stevia. If you use stevia, be careful - this stuff has such a sweetness kick that it makes the synthetic stuff look like dry toast. Another way to replace some of the sweetener, and cut down on the fat content in the process, is to replace all or most of the butter with applesauce. This supposedly works up to a half cup (four ounces), but I've had good results with almost double that. Use natural unsweetened applesauce for this, as the sweetened stuff has all the stuff you're trying to avoid in it. Unsweetened cinnamon flavour might not be bad.
