For hot dogs, I like using plain-old generic hot dog buns. Nothing fancy, no 7-grain-sourdough-whole-wheat monstrosities. I see it as a simple delivery vehicle for the contents. Don't forget the saurkraut. It is a must-have item. For a nice boost in flavor, toast some caraway seeds lightly in a skillet and add to the kraut. A little diced ham can also be added. I had it that way in Germany and it is most pleasing. As for chiles, if you want to get fancier than sliced canned jalapenos, try something chipotle based. Scott... KCK
