My beloved and I discovered a Roasted Raspberry Chipotle Preserve being sold at a winery near here. I looked for it at a high-end grocery retailer and also found it. It is something I would never have noticed because I don't like anything sweet. This stuff, however, is really wonderful. I have trouble imagining it on shrimp but, to each his own. My girlfriend paid about $9 for 8 ounces and I got it for about $3. Take a jar of raspberry preserve and dose it up with puréed chipotles peppers in adobo sauce to taste. Throw in some finely minced jalapeños, also to taste, (± 1 Tbsp.) and you have it. I think it should be kept to the low to medium heat range to be able to take advantage of the rather delicate and subtle raspberry taste. We were in L.A. over the weekend and went to a Super Bowl party. The hostess served buffalo wings that I and Barbara were completely unable to detect any peppers in. It was about as fiery as paprika.
