Sorry if I'm a few days behind on reading the list. Some of you wanted to know about cascabel peppers. We use them in a recipe for our El Pass-O Cafe. The peppers have a round shape, thin-skinned, and hollow. The seeds rattle in the peppers hence their name cascabel means jingle bells or little rattlers. The peppers have a rich, bugundy wine flavor. Dave makes a Cascabel Pepper sauce over smoked prime rib. It is a mushroom, burgundy wine sauce. Goes great with the prime rib. The heat level is about a 5, same as a jalapeno. We order ours from The Chile Guy in New Mexico.
