I did some research and came up with some recipes. Will have to try it, sounds great! Do any of these sound "authentic"? Mary's Italian Beef The easiest, most delicious thing to do with leftover roast beef. Special thanks to Mary Spero, owner of the TNT recipes list, for this one! 2 pounds beef roast -- leftover, pre-roasted roasting pan drippings 2 Tbsp fresh oregano, finely chopped (or 2 tsp dried) 1 Tbsp fresh sweet basil, finely chopped (or 1 tsp dried) 1/2 teaspoon ground cayenne pepper -- or more 1 tablespoon fresh parsley -- minced salt and pepper -- to taste 3 cloves garlic -- minced Thinly slice cooked, roast beef and place in a Dutch oven (or put it back into the same pan in which the beef was roasted). Add enough water to cover. Add remaining ingredients and bring to simmer. After the beef has cooked for awhile, taste and adjust seasonings. Cook about 1 hour. Serve on sliced Italian bread with grilled green peppers. Don't forget to put a little gravy on bread! Onolicious! MARY'S NOTE: If you fix a large roast for dinner, take the leftovers, sliced thinly, and put your Italian Beef on the stove to cook, while you're cleaning up the kitchen. You can cook the Italian Beef in the same pan used for roasting. If you make brown gravy for your roast beef, remove some of the drippings before you make the gravy and save them for the Italian Beef. You won't be sorry! LYNN'S NOTE: This freezes well. Place beef and juices in heavy freezer bags. Just reheat to serve. ----------------------------- Italian Beef Sandwich 1 3-4lb chuck roast , 2 tbsp garlic powder , 1 tsp rosemary , 1 tsp minced onion , 1 tbsp oregano , 2 tsp salt , 1 tsp celery seed , 1-2 tsp red pepper , 1-2 medium green peppers chopped 1)Cut roast in large cubes , 2)Add next 9 ingredients , 3)Place all ingredients in crock pot , 4)Cook 5 hrs on high , 5)Stir and shred beef , 6)Serve on your favorite hard rolls , 7)garnish with montery jack cheese,dill pickles, and extra roast juice ------------- Mom created this delicious recipe for Italian Beef. It is pretty easy to prepare and is really good on Italian bread as a sandwich, which is the way it should be eaten. Yum Yum!! Ingredients: 2 1/2 lbs of beef round eye roast. 1 package of brown gravy mix. 1 tsp. salt. 1 dash of pepper. 1 tsp. of food seasoning & soup mix (the best is "Podravka Vegeta" it comes in a tin container with red and white writing, 500g). 4 green peppers - sliced in 8ths. 1. Place the beef in a large pot and cover with water. Boil for about an hour. 2. After an hour, check the beef to determine if it's done by piercing it with a fork. If there's blood oozing out of the beef, it needs to cook a little bit longer. However, if you do not see any blood, drain the water from the pot and refill the pot with fresh water. At this point slice the beef against the grain into thin slices and add to the fresh water. 3. Once fresh water has been added to the pot, add salt, pepper, and food seasoning. Cook the beef for about another 1 1/2 hours at medium heat. About 15 minutes before the beef is done, add the green peppers. Once the the peppers are tender, add the package of brown gravy mix and cook for a few minutes longer until the mix slightly thickens. 4. Taste the gravy once done to determine if additional salt or pepper is needed. If not, simply slice up some Italian bread and make Italian beef sandwiches. This is a great dish for parties as its inexpensive and hearty. --------------- Chicago Italian Beef ingredients for 1 servings : · 1 1/2 c. beef stock · 1 c. water · 3 tbsp. tomato paste · 1/2 tsp. crushed red pepper · 1/2 tsp. salt · 1 bay leaf · 1/4 tsp. minced garlic · 1 lb. rare roast beef, sliced thin · 2 lg. green peppers, sliced lengthwise · 4 loaves Italian bread (4" 5" long) preparation: Combine beef stock, water, tomato paste, pepper, salt, bay leaf and garlic in a skillet. Cover and simmer for 15 minutes. Taste and adjust seasonings. Add roast beef slices and green pepper slices. Cook, uncovered, for 15 minutes. While beef is cooking heat bread in a 350 degree oven for a few minutes. Cut loaves of bread into half lengthwise. Dip each piece of bread, cut side down, into pan liquid (omit this step if you like a dry beef sandwich). Assemble sandwiches dividing beef and peppers evenly between the 4 loaves of bread.
