The heat we feel isn't related to the taste buds,  it's registered on your
tongue's pain receptors.  This doesn't mean we can't taste peppers in
fact quite the opposite is true and I personally find Jalapenos the best
tasting pepper,  however the burning sensation is unrelated to taste and
comes directly form the capsaicin acting on the pain receptors.  Our
brain's answer to pain is to release endorphins,  there are several
examples, the most commonly known and talked about is the "runners
high" in which long distance runners experience a sense of euphoria and
well being after a long run.  It's why dedicated runners are practically
addicted to it and us fire eaters love the burn.

One interesting thing with peppers...  because it is self inflicted pain
psychologists call it a form of benign masochism.
