For extending the spinach harvest, a great book is Eliot
Coleman's book on 4 season gardening.  He explains how to
set up cold frames so that you can harvest all the way
through until spring.  After a certain point in the fall
the vegetables won't really grow much, but the cold frames
will keep them from freezing so you can continue to harvest
them.
