Here's a web page with the Latin name of Chinese water chestnuts. From
other sites, primarily in Oz, I found that they grow best in about 30 cm
of water and are planted from corms. Seems they must grow them in Oz for
commercial use but numbers are planted in home water gardens.

Water Chestnut<= /SPAN>, common name for any member of the only genus of an aquatic he= rb family, and also for the Chinese sedge (Eleocharis tuberosa). T= he sedge's tuber, known as the Chinese water chestnut, is used in Chinese= cooking.

The water chestnut genus contains three species native to= the eastern hemisphere. One species (Trapa bicornis) bears a two-= horned nut; the second (Trapa bispinosa) bears the singhara nut; a= nd the third species (Trapa natans) is known as trapa nut.

<= b>Scientific classification: Water chestnuts make up the genus Tra= pa, family Trapaceae. The Chinese sedge belongs to the family Cyperac= eae.
