FWIW we can often find gyros meat in the freezer section of our (a little
bit speciality) grocery store (and this is in the wilds of Oregon).  It's a
combination of beef and lamb.

There are tons of tzatziki recipes floating around the web.  I usually just
wing it; drain the yogurt to let it thicken a few hours, then add shredded
cucumber, garlic (lots of garlic!), chiles (what can I say, we like out
food spicy!), a bit of lemon juice.  We tend to have tzatziki, hummus, and
babganoush around the house all summer long--with a fresh loaf of bread and
a salad, it makes a fast and easy summer meal.
