Gosh, Ron -- nobody's ever asked me before what some of my
favorite things are to do with apricots! 

I love 'em dried.  Fresh ones are never juicy here -- always a
disappointment. I'd rather have a good peach... However, I
have not had a Good Peach in perhaps 15 years, when we
used to take the kids fruit picking up county. 

But I do have a recipe for a ribbed pork roast, riblets slightly
separated, with cooked rice and apricots stuffed in between.
It's a wintertime dish, and a nice change.
