Here is my mother's apple butter recipe.

5 lbs of apples (and we just used what ever was on the tree, it had been
grafted with 4 different kinds)
cut and cook the apples, unpeeled, but I usually remove the stems and seeds
and seed casings just because I don't like those casings in the applebutter.
When the apples are soft, process thru a food mill to remove the skins.  Put
that back in the pot and add 1/3 Cup of apple cider, 1 cup brown sugar, 3
cups white sugar 1 tsp ground cloves, 1Tbls ground cinnamon.  Bake in a 250F
degree oven for 5-6 hours then put into canning jars and process.
