Hello Friends,
I am Jill Ann Williams, Editor and Culinary writer for The Violet
Society, based in England; but International in scope. Yes, Violas are
edible and the leaves of Violets are especially high in Vitamins A & C
and also contain other benefical properties. You might like to see the
Violet Society site:
http://www.sweetviolets.com
The Food and Drink section will have some ideas for the culinary uses of
Violets.
Also, The Violet Society Journal and page 3 has a Culinary Page.
The Violet Society is completely free with no gimmicks.

Flowers that are good to eat:
Pansies/violas/jonny jumpups
Roses (if no toxic chemicals are used) makes yummy jelly!
Borage
Chyrsanthemums (again if no toxic chemicals are used)
Black Elder flowers (prepared as fritters, I've never tried but sounds
good)

There are more but these are the first off the top of my head.
