Eggpplant is such a wonderfully versatile veggie, that I delight in learning new ways to fix it, all the time. The Moroccan version I mentioned earlier is wonderful, as is the Armenian version with pomegranate molasses and toasted chopped walnuts as a mezze. Enjoy your gardens this weekend!
