Thank you all for your very kind suggestions. Yes, George, I am familiar
with Baba Ghanough, and the other goodies, thank you. As for eggplant
dressing, that is new to me, Martha and George, and I will have to
search it out on SOAR...whose new web site I find a vast improvement.

And, Margaret, thank you, too, for your very kind suggestion. EP is one
of our all time favorites, and I have a dynamite recipe for it featuring
prosciutto.


Eggpplant is such a wonderfully versatile veggie, that I delight in
learning new ways to fix it, all the time.

The Moroccan version I mentioned earlier is wonderful, as is the
Armenian version with pomegranate molasses and toasted chopped walnuts
as a mezze.
