Mary Anne: Here's another recipe that I have used. Came from a 1945 issue of the Kerr Canning Book.
Not my book, a friend has a copy she inherited from her Mom

			PEAR HONEY

3   lbs		ripe pears
1   cup		diced pineapple (I used crushed)
		one lime, use grated rind and the juice
5   cups	sugar

Wash, pare, core pears, slice before measuring. Run through food processor and chop fine. Dice
pineapple fine and combine with pears. add lime rind and juice. Add sugar and cook over slow heat
stirring frequently. Cook for 20 minutes. Pack into sterilized hot jars and seal with two piece lid
and ring. For modern adaptation I boiling water bathed the jars for 10 minutes for added safety.

I'm torn as to which is the best tasting recipe so you might want to try both.
