The varieties grown there and in India tend to be a bit more on the tart side than the ones grown here. One of my favorite uses is in a Turkish relish for kabobs with onion, green pepper, Aleppo pepper and pomegranate molasses. Sweet and spicy at the same time. Got the recipe from Steve Raichlin's BBQ Bible.
