Hi, Ron -- I have always thought that the darker sweet potato sold as a yam was much sweeter than the lighter one, sold as a sweet potato. The dark ones we scrub, bake, and eat, including the skin. Since the vitamins and minerals in white potatoes are supposed to be just under the skin, I presume that it would be the same for the sweet ones. I noticed that the biological name of the sweet potato in the chart George had us read is the same one as the beautiful ornamental sweet potato vine we put in our hanging pots. At the end of the summer there are one or two "potatoes" the size of walnuts down in the bottom of the pot ... so therefore, I consider myself truthful in saying that I, too, have raised sweet potatoes...<g>...
