Marc, this is not a solution to your smoker quest, per se, but you might be able to adapt this technology. In the American southwest, they roast (for peeling) chiles such as Big Jims and the other New Mexico types, and do loads at one time. Some folks have adapted clothes dryer drums with holes in them (they may be commercial clothes dryers) and fins to tumble contents as it spins for roasting chiles. Chile-heads used to have basic info on smoking on their website. Is that completely gone or did someone pick up that information on their hard drive?
