Hello, friends,
 
After grilling your eggplant, try making a dip (Bettingan al Ruman): Mix 2 tablespoons of pomegranate molasses (found in any Middle Eastern market), NOT grenadine!!,  with 1 crushed garlic clove and 4-5 tablespoons of water.(Many use olive oil instead of  water in the dip with grilled eggplant). The combo of pomegranate molasses and eggplant is a marrriage made in heaven.
 
Since we have 19 eggplants of the American (large oval) Japanese, Turkish orange and Armenian white, we have loads of ME recipes, since eggplants are used in the ME just as potatoes are in Western Europe and the U.S. Some of the dishes have wonderful names such as Imam Bayaldi , Turkish, for "The Imam Fainted," because the dish was so delicious. 
 
If you like, I will be happy to post one a week. Does anyone here have favorite ways of preparing crook neck squash?
