I've been using the old fashioned way (the sun) and it seems to work
well in reasonably small quantities.
Slice tomatoes fairly thinly (about 3 - 4 mm thick). Place seed side
up on tray (I'm using a metal non-stick pizza tray with drainage
holes). Place in sun with insect cover over it. Leave for a few
days until dried enough. Place in olive oil to store.
I've also used the oven at about 70 degrees Celcius which also works
fairly well.
You can also get commercial dehydrators which cost about A$100 here -
the Breville model will handle 5 trays - I'm still considering this
purchase.
