Slice tomatoes fairly thinly (about 3 - 4 mm thick). Place seed side up on tray (I'm using a metal non-stick pizza tray with drainage holes). Place in sun with insect cover over it. Leave for a few days until dried enough. Place in olive oil to store. I've also used the oven at about 70 degrees Celcius which also works fairly well.
