published today in the Journal of the National Cancer Institute. The
special cancer-fighting element in tomatoes is lycopene, a compound that
protects cells from cancer-causing oxidants. The data are most compelling
for cancers of the prostate gland, lung, and stomach, but links between
tomatoes and lower levels of several other cancers are also reported,
including pancreatic, colorectal, esophageal, oral, breast, and cervical
cancers. The study shows that you can eat tomatoes any way you want and
still reap all the health benefits: raw or in ketchup, spaghetti sauce,
tomato paste, soup, and salsa. Cooking and processing tomatoes does not
diminish the cancer- fighting effects. One warning: Some processed foods
containing tomatoes also contain fats and sugars that are not healthful
