Worked with a guy who was the Hummus Master (who also aided greatly in my education of vegetarian cuisine...couldn't make me turn from the Ways of Flesh though...). He really didn't work in the kitchen, but whenever hummus was needed, or black olive tapenade, or a couple other things, the call was put out and back to the kitchen he came. Anywho, he used to make some killer hummus with roasted red peppers (mixed in at the end; cut into small strips or chopped small) and typically, he added a lot of cayenne as well as some fresh chiles (chopped small) when we had 'em on-hand. Honestly, I don't think I'd really enjoy hummus much if it wasn't spicy. Hell, I don't enjoy eating much of anything that isn't spicy...veggie, fruit, grain/legumes, nor beasties....
