An incredibly simple (and TASTY) use for canned chipotle in adobo is in taco mixes. I use standard packets of "Old El Paso" or half a dozen other varieties of taco mix, substituting ground turkey or reconstituted frozen tofu for the ground beef. After browning the meat, you add the taco mix and water (I use beer here) + however much of the can of chipotles you can handle and let simmer for ~20-30 minutes. Serve with refrieds, tortillas and sharp cheddar +whatever veggies you like (I dig LOTS of cilantro and fresh tomatoes, but it's a little late in the year for THEM). I'm getting hungry just writing about it! ed
