Oh, I didn't even notice that comment, until your message made me re-read.

If I had, I would have made a big deal as usual about what a huge quantity
of cayenne is consumed fresh (green) in India, both whole-as-is as table
condiment, though most of all as ingredient in cooking and chutneys.  And I
would have emphasized over and over how wonderful it tastes green, both
whole-as-is as table condiment, and of course as ingredient in cooking.
Fresh green cayenne is indeed one of the best of chiles.

P.S. In India, "chutney" mostly means a fresh concoction something similar
to what we think of as "salsa", not that sugar-syrup jam stuff ("mango
chutney") which occupies only at most 0.0001% of chutney consumption in
India.
