I had gotten these recipes from the Florida Cookbook which is available online at: http://www.fl-ag.com/ They are definitly good Red Hot Oysters (Oysters, hot sauce, any questions?) 36 Florida oysters in the shell 3 ounces of hot pepper sauce Wash oysters thoroughly. Shuck and place oysters on deep half of shell removing any remaining shell particles. Arrange oysters on baking sheet and top with ½ teaspoon of sauce. Bake in preheated oven at 350 degrees for 10 minutes or until edges begin to curl. Spicy Clams with Lime Butter (needs more heat) 50 1 inch Florida clams 2 teaspoons chopped Florida garlic 1 tablesoon chopped Florida jalapeño 1/4 cup chopped Florida cilantro 1/2 cup white wine Rinse clams and drain. In large sauté pan with lid bring remaining ingredients to a boil. Add clams and cover. Cook 5 to 7 minutes or until clams open. Serve with lime butter if desired. Lime Butter 1/2 cup Florida butter 1/4 cup Florida lime juice Melt butter and add lime juice. Serve with Spicy Clams.
