Friends: Having recently spent a week in Billings, Montana, and having expected to go through a week-long chile drought, I am happy to say this was not the case. If you're ever in Billings, check out Walker's Grill on North 27th Street, and ask if Mike Carmen is working in the kitchen. If he is, order the Bourbon Street Pasta and tell them to tell Mike you want the Fire Pasta. He'll add between 1 and 3 habaneros to the dish depending on what you like- and I liked it a lot! The dish itself is sort of like a chicken gumbo (andouille, chicken, peppers, tomatoes, etc.) except served over linguine instead of with rice. It'd be excellent even in its pristine form, but with those marvelous little slivers of orange habanero laced throughout, it was perfect. Mike is one of the regular chefs there, and my friends in Billings tell me he'll spice up anything you want, although I haven't been back to take them up on it. Thought you'd like to know.
