Wash thoroughly and vacuum pack and put into the freezer some extras for emergency use. The flavor is terrific and you pound it into a paste with fresh garlic, chiles, etc. The pounding really releases the flavors. Yes, I have a Cuisinart and a Robot Coupe, but for this pounded is the only way. Great tension reliever! If you have Southeast Asian (Hmong, Laos, Vietnamese) people in your area they grow the best varieties of cilantro, taro, lemon grass, basil and great chiles. They show up at many of our local Farmer's Markets here in the San Francisco Bay Area. I just planted some coriander/cilantro from seeds I purchased in Burma & Thailand in Jan. 99.. Mary-Anne
