Nope, but that isn't gonna stop me from speculating.

Diablo means devilled and that usually implies spicy with either mustard
or cayenne.

Since Buford was I believe a Texan, it could have been a smoked, pulled
brisket sandwich with a hot tangy BBQ sauce.
