I tried that a bit last year.  Actually, worked pretty well.  I made all
sorts of burritos.  One of my favorite fillings was curry chicken and rice.
Not a typical burrito, but good packaging for the curry...

But, alas, tortillas did't freeze very well (or, rather, they didn't thaw
well), so I only could do burritos a few days in advance, and eventually
stopped.  I'll have to do burritos again, I think...
