I used to live in Albuquerque and, as a result, was fortunate enough to visit the Coyote Cafe General Store in Santa Fe on numerous occasions (mostly overpriced and geared towards tourists, but a few nice items and lots of free samples). If you like the chipotle sauce, I would also recommend the ancho chile sauce (very mild, but tasty) and the "Howlin' Hot Sauce" -- a thick orange habanero sauce that I think is delicious (somewhat similar to Matouk's). Note that all of these sauces are available from many sources and are most expensive at the Coyote Cafe. An interesting side note here -- the only non-Coyote Cafe hot sauce that Mark Miller (owner/chef of Coyote Cafe) puts on the tables in his restaurant is El Yucateo green -- mmm-mmm good.
