>Well, nevah evah disagree with a native of Tejas! I happen to have three >different kinds of corn meal in mah cupboard! Yaller corn meal, whiate >grits(yup, those kand!)(y'all!) AND blue corn flour!!! Top that all >youse >suthiners.....raht Randy?? Every trip we make to the USof AA(Rael & Rain) >we stock up on grits, a staple in our house, for at least 40 yars! So, >that last recipe, the corn mush, was a combination of grits and cornmeal, >for those who have not tried that, it is a good combination....beat the >heck outta it, just like polenta(the Eyetalian version of grits!!!) How >evah y'all decide to do it, enjoy it!!! Cheers, Doug in BC...an Irish >Cdn sorta mixed up cook! Ya there Rael? i hear ya y'old redneck canuck...sheesh...n'people talk 'bout my southun aksent...sheeet.. but yep, yer right, everyone's been right 'cept Michelle who wuz only half wrong, really, not that it matters anyhow...and ain't none of it set in stone by any means...or is that ground in stone? oh my, sucketh did that...ahem... Grits are white white white...usually ground hominy (been said already); hominy be corn that's been soaked in lye (or other wicked solutions); but some mills grind white corn (or yellow (!!) for that matter) quite coarse and call it grits. Beats me...redneck that I am, I survive quite well w/o grits. Like 'em, mind you, but they're not a staple for me. Cornmeal is ground corn (duh), usually yellow, but there is white on the market; either bleached (yeck) or made from white corn. Polenta is technically a product made *from* cornmeal...the Italian version of cornmeal mush, sorta...cooked cornmeal with lots (lots) of cream, butter, and preferrably (sez me) parmesan and basil. Mmmmmmmm, damn good stuff. BUT...there ain't no reason one cannot have cornmeal in the house and make most anything needing/calling for some kinda ground corn product...cuz cornmeal is it...ground corn, baby... 'course, grits outta cornmeal ain't grits <g>...that dog don't hunt. Peace, Hendrix, and I fergot the chiles...so sue me...better yet, whip it, whip it good... Rael64
