I don't really have any measures because I made it up and it depends on the number and size of chiles you have. First I roasted some New Mex Chiles over a gas flame, peeled them, cut the tops off (where the stems are) and removed the seeds. I then mixed up a concoction of ricotta, feta, chopped chipotle en adobo with a bit of the sauce added as extra, chopped fresh cayennes and egg. (I mixed it until the Feta lumps were really small and everything was mixed up very well.) I stuffed the chiles with this mixture and placed them in a casserole dish. I then cooked up some tomatoes with some more chipotle until it was like a thick sauce. I sprinkled some of the left over cheese mix over the stuffed chiles then topped with the tomato mixture. Cooked it all for about 30-40 minutes at approx 375F (190C) until they were hot and the cheese was slightly puffed up. Very yum! I'm dreaming of doing it again already!
