While I frequently put beans, (but not potatoes) into my chili, the idea that the starch digests slower is incorrect. If you're substituting beans and potatoes for meat, the starches will digest much quicker than the meat will. If I add beans to my chili it's because I like them. Damn the "Purists"! If it tastes good, eat it.
