Brent, I much prefer red ripe Serranos and I can tell the difference half asleep between cayenne and Serranos for sure! I am one of those whose palate and preference 9 out 10 times is for red and ripe chiles. My only exception is in some Indian Dhals where green is right! LOL Quite actually a Vindaloo is best fixed with Habaneros IMHO. The hot fruitiness is lovely as a contrast especially to Lamb Vindaloo. Oh serious YUM! :-) Mary-Anne << Of course, green Serranos are not a very big difference in flavor from Cayennes, and they don't ruin the flavor of Indian food (unlike Habaneros, which mostly should be confined to African and Caribbean preparations, e.g. jerk, where they really shine and should definitely not be used in Indian food), so I can understand why you might use Serranos instead of Cayennes if you cannot get fresh green Cayennes during Winter. >>
