I've been making this Guylas for about 30 years...  To date, I've not found
that browning the dredged meat makes it bitter.

Ignorance bliss?  Luck?  Who knows?  The Shadow?

I think it is generally not recommended to fry paprika powder because it
gets
bitter quite easily. Maybe that's a myth, but I never dared to try that out.
