[CH] Another crockpot

Chalupa
2 lbs. dry pinto beans, soaked overnight
1 lg. onion, chopped
3 - 5 cloves garlic, crushed
24 oz. can chopped chilies, or 3-5 chopped jalapeno peppers, or whatever
4 - 5 Tbsp. chili powder
3 to 4 lb. pork roast
1 -2  tsp. oregano
salt to taste
1 - 2 tsp. Cumin
1 - 2 tsp Cajun jalapeno seasoning

Place roast in bottom of crockpot then beans, roast and all other
ingredients in heavy kettle or crock pot. Cover with water and simmer
covered until beans are tender and meat falls off bone. Remove all bone and
fat from meat. Return to beans and cook uncovered until thick.

Serve with typical garnishes - sour cream, chopped green onions, olives,
shredded cheddar, etc.  Can be rolled up in a tortilla or eat with tortilla
chips.
