I bought the last copy of the latest Everyday Food on a magazine stand in the midst of PA on Friday and noticed an article on chiles and how to use them, with a few recipes. She shows how to use jalapenos, poblanos and serranos. No other chiles are mentioned but she says that there are over 200 varieties (aren't there more???) She shows how to roast them (for newbies) and what to do with them. Of course, we already know what to do with them but I thought I would mention this to those who are interested. I, for one, am not a big fan but this new magazine is pretty good. There is also a section on how to use the large amounts of tomatoes that are in the garden right now (except mine).
