Peter: Every "extract" sauce that I've ever bought or seen lists the extract ingredient in some form or another; sometimes just as generic as "pepper extract", or as specifically "oleoresin capsicum" (in one case "oleoresin cayenne"). With the current labeling regulations, I don't think just putting "chiles" on the label would cut it... Jonathan
