Ghanouj, Arabic. Can be transliterated as either mutabel or mouttabel. It's
the Arabic on the Arabian Peninsula for the eggplant dish known to Syrians
and Lebanese as Baba Ghanouj. I cook a lot of Arabic dishes, which are
really regional variations on Turkish dishes (as are many Greek dishes),
after spending a number of years in SW Asia.
