George, You might like to try this one. Got it out of a book called "Home
Gardening Wisdom". There is a similar one on Mealmasters called "Cajun
Stuffed Eggplant". Haven't tried them myself since my eggplants end up as
trap crops for CPB's. :-(
Shrimp Stuffed Eggplant

Ingredients
2 eggplants (medium size)
½ cup green tail onions chopped
½ cup celery, chopped
2  4 ½ oz cans tiny shrimp. Drained
2  cloves garlic, minced
2  tbl margarine, melted
6  slices bread
1  cup water
¼  cup parsley flakes
½ tsp salt
1/8 tsp black pepper
1/8 tsp cayenne
2 eggs, beaten
¼ cup grated parmesan cheese
3  cups spaghetti sauce
Procedure;
 Cook eggplant in boiling water for 15 minutes. Drain and let cool. Cut in
half lengthwise. Scoop out pulp, leaving shells intact. Chop pulp and
reserve.
 Sauté onions, celery, and garlic in margarine until tender. Soak bread in
water and then drain and squeeze out water. Add bread, parsley, pulp, salt,
pepper, cayenne, and shrimp to onion mixture. Stir. Cool slightly. Add eggs
and mix well.
 Place eggplant shells in a greased baking dish; fill each with shrimp
mixture. Spoon sauce over each eggplant. Sprinkle with cheese. Bake at 400F
20 to 25 minutes. To serve, cut each shell in half. Serves 8.
