Carolyn, actually, your jalapenos can be eaten at any stage, just about. They'll turn green, then very dark, then red. Mine usually get mushy before the red stage, but I sometimes have some I missed on the bush that will do so. They aren't any hotter at red, usually a little juicier and sweeter though.
