We have some cafe's that serve jalapenos as 'Texas Toothpicks'. They thin slice those jumbo jalapenos and cut sweet onions to same size. The slivers are then battered and fried. When you combine hot ones with the TAM mild ones along with the sweet onions, they are good. I just used 3 jalapenos in a corn and salmon chowder. This is served cold and 'blenderized' so I sprinkled the diced peppers on top to brighten it up a little. (This'll be dinner tonight.)
