Ron, was it you who were looking for new ideas for eggplant? If so,
FoodTV had a seg yesterday on nothing but eggplant (Emeril Live).
I think you can go to www.foodtv.com and look up the show for Jan
2 and get all the info from there.
I was channel surfing and didn't see much, but looks like he did a
veal-stuffed eggplant 'boat', and one really odd recipe. Cut eggplant
'sticks' (like very large French Fries), breaded them with flour and
egg batter, deep fried them. Nothing odd so far, but at the end, he
drained on paper towels and sprinkled with powdered sugar.
hmmm, they sure do things different in Louisiana!
