Oh... eggplant! One of my favorite recepies is eggplant rolls or sandwiches. One large eggplant Sliced in thin round slices, lightly fried in olive oil just enough so that the rawness is gone. Several cloves of garlic finely chopped and added into Whipped Cream Cheese, add salt pepper to taste, and can also add finely chopped dill and/or Chives. Mix well. Spread cream cheese over toasted Italian bread and place eggplant slice on top. Alternatively you may do away with the bread, by simply spreading the cream cheese on top of the eggplant and rolling it...rest on plate with seam side down to keep it from opening. Raven
