Hello, Martha,
How kind of you to remember:) Yes, when eggplant comes in, we have tons,
and I have been learning a whole host of new ways to prepare it, largely
from my Middle Eastern and Armenian cookbooks. Eggplant, from Morocco to
the Caucuses is used with as great a frequency with which most Americans
use potatoes...and with absolutely delicious results!
