Gee folks, I keep hearing this notion and I'd wish you would explain how it
works..." and acclimate them to your garden for a few years."  I am assuming
that you start your seeds inside; that you do not let what comes up in your
garden be your crop for that year.  How does 'acclimate' work here?  Is
there any sort of selection process going on?  Does physical environment
change the genetic material of a plant just by being there?
