Tim: I would definitely agree that I don't use a lot of hot sauce in cooking- mostly because hot sauces, having their own distinct flavors, affect the overall taste of a dish much more than do either fresh or powdered chiles. There are exceptions to that rule, of course- chipotles (or smoked habs) will have a significant effect on the flavor of a dish- but overall, I find it's easier to add heat without adding unwanted flavor through powders. Or maybe I'm just harking back to the time, some five years ago when, still an apprentice Chile-Head, I put a tablespoon of Endorphin Rush into about 2 quarts of chili.... first time I'd ever made anything too hot for ME to eat!
