.....how about making a spicy beef bbq in the crockpot to have over hard
rolls, or a pot of chili--I always use shredded or cubed beef rather than
ground.  Might make a good base to use for stuffed peppers, eggplant,
whatever.  Or make some funky layered lasagna type thing or casserole.  To
get away from the mexican tendancy, maybe some type of Asian dish or
salad....

O.K., so they aren't acutal recipes but maybe some direction to look in.
