Bearnaise Sauce (from my Escoffier cookbook): 6 tbs white wine 6 tbs tarragon vinegar 2 tsp chopped shallot pinch chopped tarragon pinch coarse pepper pinch salt 1 oz butter 3 yolks 8 oz softened butter cayenne, tarragon, chervil (no amounts given) So, no bay leaves, but it does contain chile!
