I apologize if I'm asking for information that has already been covered, but
is this meat that you have purchased for gyros lamb meat?  I have a flock of
sheep, and we shepherds are always seeking ways to market our lambs that are
more appealing and useful to consumers.  (Input here welcome; perhaps
privately since it's a little off-topic?)
